Preheat oven to 350 degrees F and grease a 9×5 inch loaf pan with coconut oil.
Peel the bananas and place them into a large mixing bowl. Mash them well with a fork or potato masher.
Add maple syrup, oil, and vanilla to the bowl. Mix well.
To a separate medium bowl, combine the flour, baking soda, cinnamon and salt. Mix well.
Add the dry mixture to the wet mixture and stir until just combined (don't over mix). The batter will be thick.
Fold in and nuts or chocolate chips you want to add.
Spoon the batter into the prepared loaf pan and smooth out the top with the back of a spoon. Top with any brown sugar or sliced bananas you want to use.
Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
Remove the pan from the oven and cool for at least 15 minutes before removing it from the pan and slicing.
