This yummy gravy is packed with flavor and perfect for holidays, weeknight cooking. Anytime!It's especially great on mashed potatoes, and I have supplied you with a recipe for my vegan mashed potatoes as well. Special Tip: You can try the "corn starch" trick more than once to thicken it. It is especially helpful with gluten-free gravy.
Melt the butter in a large pot over medium heat. Add in the flour, and mix until a paste starts to form. This is your roux.
Pour 1/2 cup of the broth into the pot and whisk well removing any lumps, add the remaining broth along with the onion and garlic powder, the soy sauce, mustard and pepper. Mix well to incorporate.
Cook for 5-10 minutes, stirring often, until thickened.
Taste, and if it is needed, add salt, or more pepper.
Move to a gravy boat and pour over your favorite dishes.
Special Tip: If you are having a hard time getting the gravy to thicken, scoop 1/2 cup of the broth out and mix it with 1 tablespoon of corn starch. Then add back to the gravy and mix well.
