This apple fennel salad is so delicious! It makes a wonderful potluck recipe or salad for get togethers. And you can make it ahead of time and chill in the fridge until you are ready to serve. You can use any apples you like, I like a combination of both tart Granny Smith and one sweet apple (Gala or Honeycrisp).Special Tip: If you really LOVE the taste of fennel, chop up 1/3 cup of the fennel fronds and add those to the salad as well.
In a jar (or medium bowl) combine the lemon juice, salt, pepper, and olive oil. Cover and secure the lid and shake well (or whisk if using a bowl). Set aside to marinate while you work on the salad.
Using a mandoline, thinly slice the fennel bulbs, apples, and red onion. Adding to a large bowl as you work.
Add the arugula to the bowl, along with 1/2 of the walnuts.
Shake or whisk the dressing again, then pour over the salad. Toss well so that all of the salad is coated with dressing.
Top with the remaining walnuts and the vegan cheese (if using) and serve cold.
You can make this ahead of time, cover and chill. It's a wonderful vegan potluck recipe!
