Apple Fennel Salad

This Apple Fennel Salad is so yummy, and perfect for get togethers and potlucks. But I like to make it for dinner. I have a double serving and love how protein packed this is for a vegan salad!

Make it ahead and chill in the fridge until your guests arrive, or the night before a work potluck. It holds well and gets better as the dressing marinates the salad.

Many people love cheese on their fennel salad. I have included an optional vegan cheese, and if you want a vegetarian version blue cheese, goat cheese, or parmesan cheese works great.

I find that it does not need the cheese at all. This apple and fennel salad is packed with flavor on its own.

When it comes to apples in this yummy salad, you can pick your favorites, or what’s on sale.

I like a combination of sweet and tart apples, so I get one Granny Smith and one Honey Crisp. But choose what ever speaks to you, all apples are great in this recipe.

You can use any apples you like, I like a combination of both tart Granny Smith and one sweet apple (Gala or Honeycrisp).
Special Tip: If you really LOVE the taste of fennel, chop up 1/3 cup of the fennel fronds and add those to the salad as well.
