I like to make my own spreads, because then I know exactly what is in them.

I also happen to work from home, more specifically, in my kitchen. So cooking is my “thing”. If you prefer not to do any extra mixing or blending for a homemade spread, by all means pick up some at the store instead.

Shopping List for Veggie Sandwiches:

  • 1 teaspoon dried basil
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 zucchini
  • 1 red bell pepper 
  • 1 beefsteak tomato 
  • 1 tablespoon olive oil
  • 4 slices bread
  • 2 tablespoons Homemade Spread (see options below)

How to Make a Grilled Veggie Sandwich

I wanted to make these vegetable sandwiches accessible year-round. So I included both grill and grill pan (on a stovetop) directions below.

This way you can enjoy this healthy plant based meal when there’s snow on the ground too.

How to Make Vegan Sandwiches:

  1. Preheat a grill to medium-high, or a grill pan over medium-high heat on the stove top.
  2. To a small bowl, mix together the dried basil, garlic powder, salt and pepper.
  3. Add the sliced veggies and olive oil to a large bowl, and mix well.
  4. Sprinkle the seasoning over the vegetables and toss again to coat all the sliced with seasoning.
  5. Add the vegetables to the grill or grill pan in a single layer.
  6. Grill for 5 minutes, flip and grill for an additional 3-5 minutes. Until charred and softened.
  7. Meanwhile, toast the bread to your desired doneness.
  8. When the veggies are done, it’s time to start assembling. Top two slices of toasted bread with one tablespoon (each) of the spread you chose (see above).
  9. Then top with 1/2 of the veggies for each sandwich. Finally add the final slices of bread.
  10. Cut in half and serve.
