  • 1 15-oz can of chickpeas, drained and rinsed

  • I green onion sliced
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper

How to Make a Stuffed Recipe for Vegan Sweet Potatoes:

  1. Preheat the oven to 425 degrees and line a rimmed baking sheet with parchment paper.
  2. Cook the sweet potatoes (5 ways to cook below!)
  3. In a medium bowl combine the spice blend and set aside.
  4. Add the quinoa, 1 teaspoon spice blend, and water to a pot and cook the quinoa according to the package.
  5. Meanwhile, add the chickpeas to the bowl of remaining spices and toss together until well coated.
  6. Move the chickpeas to the prepared baking sheet and spray with olive oil.
  7. Add to the oven and bake for 20-30 minutes until crispy.
  8. To assemble the sweet potatoes: Cut the sweet potatoes in half and use a fork to slightly mash the centers (just enough that the quinoa will set well in there). Top with cooked quinoa, crunchy chickpeas, green onions and parsley and serve hot.

5 Ways to Cook Sweet Potatoes

Oven Baked Sweet Potatoes:

  1. Preheat oven to 425 degrees. 
  2. Line a rimmed baking baking sheet with foil or parchment paper. 
  3. Scrub the sweet potato clean, then use a fork to puncture the sweet potatoes on all sides.
  4. Bake until fork tender, about 50 minutes.
  5. Leave on the baking sheet to cool.

Microwaved Sweet Potatoes:

  1. Scrub the sweet potato clean, then use a fork to puncture the sweet potatoes on all sides.
  2. Place the sweet potato on a paper towel and microwave it on high for 3 minutes.
  3. Turn it to the other side and microwave for 2 more minutes, or until fork-tender.
  4. Carefully remove- it will be very hot!

Slow Cooked Sweet Potatoes:

  1. Scrub the sweet potatoes clean, no need to poke with a fork.
  2. Place the sweet potatoes in the slow cooker in a single layer.
  3. Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  4. Carefully remove- they will be very hot!

Instant Pot Sweet Potatoes:

  1. Scrub the sweet potatoes clean, no need to poke with a fork.
  2. Add the trivet and 1 cup of water to the Instant Pot.
  3. Add the sweet potatoes to the top of the trivet in a single layer.
  4. Secure the lid and turn valve to seal.
  5. Select Pressure Cook (or Manual on High) for 15 minutes.
  6. Allow pressure to release naturally for 15 minutes.
  7. Release remaining pressure, remove lid, and remove carefully – they will be hot.

Barbecue Sweet Potatoes:

  1. Preheat grill to medium low or 450°
  2. Scrub the sweet potatoes clean, no need to poke with a fork.
  3. Wrap in foil (you can add oil and salt to the potato before wrapping if you like).
  4. Carefully place the foil wrapped sweet potatoes to the grill in indirect heat.
  5. Close the lid and grill 30 minutes. Rotate with tongs and grill for an additional 30 minutes.
  6. Carefully remove- they will be very hot! And let cool before removing the foil (use oven mitts to do so).
