Preheat the oven to 425 degrees and line a rimmed baking sheet with parchment paper.
Cook the sweet potatoes (5 ways to cook above!)
In a medium bowl combine the spice blend and set aside.
Add the quinoa, 1 teaspoon spice blend, and water to a pot and cook the quinoa according to the package.
Meanwhile, add the chickpeas to the bowl of remaining spices and toss together until well coated.
Move the chickpeas to the prepared baking sheet and spray with olive oil.
Add to the oven and bake for 20-30 minutes until crispy.
To assemble the sweet potatoes: Cut the sweet potatoes in half and use a fork to slightly mash the centers (just enough that the quinoa will set well in there). Top with cooked quinoa, crunchy chickpeas, green onions and parsley and serve hot.
