Roasted Chickpeas

These Roasted Chickpeas are great on salads, soups, or eaten alone as a protein packed snack!

I originally made them for my wonderful Stuffed Vegan Sweet Potatoes Recipe, but I snacked on them so much and added them to so many more recipes. That I had to give them their own recipe card and post.

Ingredients in Baked Chickpeas

If you’re looking to lower sodium, feel free to omit the salt all together. You can also get unsalted cans of garbanzo beans/chickpeas. Both of these swaps will cut the sodium a lot.

Shopping List for Baked Garbanzo Beans:

  • 2 cans (15-oz) chickpeas
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • Olive Oil Spray

How to Make Roasted Chickpeas

I love parchment paper! It not only cuts down clean up time, but it means these chickpeas won’t stick to the baking sheet. You can skip the parchment paper if you like, just be sure to oil the baking sheet.

And while I’m talking about the baking sheet, you really need rimmed baking sheets/cookie sheets for this recipe. Otherwise the chickpeas will roll all over the place and off the sheet. You have been warned (wink).

How to Make Baked Chickpeas:

  1. Preheat the oven to 425 degrees and line a rimmed baking sheet with parchment paper.
  2. In a medium bowl combine the spice blend and mix well.
  3. Add the chickpeas to the bowl of spices and toss together until well coated.
  4. Move the chickpeas to the prepared baking sheet and spray with olive oil.
  5. Add to the oven and bake for 20-30 minutes until crispy.

I must warn you, these are super addictive! Similar to the corn nuts we all loved back in the 90’s, they are crunchy and packed with flavor. But these also have a healthy dose of plant based protein and aren’t packed with chemicals like cornets.

These roasted chickpeas are just 129 calories for 1/2 cup!
They make great snacks, but I especially like to add them to the tops of salads, soups and in my yummy stuffed sweet potato and avocado recipes.
Special Tip: Store for up to a week in an airtight container, on in he freezer for up to a month.
