  • Olive oil spray
  • Bell pepper
  • Red onion
  • Jalapeño
  • Frozen corn
  • Canned black beans
  • Taco Seasoning
  • Medium tortillas
  • Vegan cheddar shreds

Optional Toppings:

  • Guacamole
  • Salsa
  • Green onions
  • Chopped cilantro

How to Make Vegan Quesadillas

If you want to make the veggie quesadillas with grill marks, make the recipe filling as directed in the skillet. But when you add the tortillas, move to a grill pan instead of a skillet.

How to Make Veggie Quesadillas:

  1. In a large skillet over medium heat, spray with olive oil and add the bell peppers, onions, jalapeño, and corn. Cook until the bell peppers start to soften, about 5 minutes.
  2. Add the Taco Seasoning, black beans and 1/4 cup water.
  3. Lower the heat to low and cook until the liquid is absorbed.
  4. Move the veggies to a plate or bowl.
  5. Wipe out the skillet and spray with olive oil. Heat over medium heat.
  6. Add one tortilla to the skillet, add 1/8 cup vegan cheddar cheese to one side. Top with 1/4 of the veggies, then top with an additional 1/8 vegan cheese cheese.
  7. Place a second tortilla on top and cook until the vegan cheese starts to melt.
  8. Flip the quesadilla and cook until golden brown. The vegan cheese will be melted and may spill out a bit. This is ok, and makes for a better quesadilla!
  9. Move the quesadilla to a plate, and then move onto the next tortilla, following the same steps so you have 2 vegan quesadillas.
  10. Once your vegan quesadillas are done cooking, cut each into 4 triangles and serve with optional toppings.
