These Vegan Quesadillas are packed with flavor and healthy ingredients. Best of all, they are quick and easy to make!Special Tip: If you don't like using vegan cheese, mash an avocado and smear one side of the tortillas with it. Then continue with the recipe. It will hold the ingredients together and still make a fantastic vegan quesadilla!
In a large skillet over medium heat, spray with olive oil and add the bell peppers, onions, jalapeño, and corn. Cook until the bell peppers start to soften, about 5 minutes.
Add the Taco Seasoning, black beans and 1/4 cup water.
Lower the heat to low and cook until the liquid is absorbed.
Move the veggies to a plate or bowl.
Wipe out the skillet and spray with olive oil. Heat over medium heat.
Add one tortilla to the skillet, add 1/8 cup vegan cheddar cheese to one side. Top with 1/4 of the veggies, then top with an additional 1/8 vegan cheese cheese.
Place a second tortilla on top and cook until the vegan cheese starts to melt.
Flip the quesadilla and cook until golden brown. The vegan cheese will be melted and may spill out a bit. This is ok, and makes for a better quesadilla!
Move the quesadilla to a plate, and then move onto the next tortilla, following the same steps so you have 2 vegan quesadillas.
Once your vegan quesadillas are done cooking, cut each into 4 triangles and serve with optional toppings.
