Ingredients for Vegan Brownies

I like to make “flax eggs” for this recipe for vegan brownies, it takes just a couple minutes and is packed with omegas! But if you prefer to use imitation eggs, that’s ok too. You will want to equivalent of 2 whole eggs.

You can also swap out the coconut oil for vegan butter and the flour for gluten 1:1 flour.

  • 4 tablespoons ground flax seeds
  • ½ cup water
  • ¼ cup coconut oil
  • ¾ cup light brown sugar
  • 1 cup vegan chocolate chips
  • ½ cup unsweetened cashew yogurt
  • 1 cup flour (or 1 to 1 gluten free flour)
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ⅛ teaspoon salt
  • 1 cup unsweetened almond milk

How to Make Vegan Brownies

I like to make these brownies in a large sauce pot… It makes clean up a breeze and you won’t need extra bowls. So get out your big sauce pot and enjoy the ease of (almost) one pot brownies.

And if you want to add in some nuts or other goodies to the batter, or top your brownies with some decadent bites. The next section has you covered with add-ins and toppings.

How to Make Brownies:

  1. To make the “flax eggs” stir the ground flax and water in a small bowl. Set aside to thicken.
  2. Preheat oven to 350 degrees and using the inside of the butter wrapper rub coconut oil on the inside of a 9×13 casserole dish.
  3. In a large sauce pot add the coconut oil, brown sugar, and chocolate and heat on low until melted. Mixing often.
  4. Once melted, remove from heat and mix in the cashew yogurt, almond milk, and the “flax eggs”.
  5. To the pot, add the flour, cocoa powder, baking soda and salt. Mix together until just combinded, it will be thick…
  6. Add the brownie mix to the preparied cassarole dish, and smooth to an even layer.
  7. Place in the oven for 30-40 minutes, you know they are done when the sides pull away from pan and the center resists pressure.
  8. Let cool for 1 hour before cutting into 16 squares.

Toppings and Add-Ins

Try some of these brownie add-ins and mix them into the brownie batter before adding to the baking dish. And try some of the toppings if adding into the batter seams too labor intensive.

Brownie Add-Ins:

  • Nuts (walnuts, peanuts, pecans, or chopped almonds)
  • Dried berries (cranberries, raspberries, or strawberries)
  • Vegan Pretzels
  • Crushed candy canes

  • Peanut butter (heat it up in the microwave to drizzle over the top)
  • Flaked coconut
