This vegan sandwich comes with 3 yummy spreads to try, and can be made in under 15 minutes!These vegetable sandwiches are a great lunch or dinner, and if you toast the bread very well, you can even pack this as a work or school lunch. Special Tip: You can get store-bought spreads as well as make my healthy vegan spreads. Choose your favorite.
Preheat a grill to medium-high, or a grill pan over medium-high heat on the stove top.
To a small bowl, mix together the dried basil, garlic powder, salt and pepper.
Add the sliced veggies and olive oil to a large bowl, and mix well.
Sprinkle the seasoning over the vegetables and toss again to coat all the slices with seasoning.
Add the vegetables to the grill or grill pan in a single layer.
Grill for 5 minutes, flip and grill for an additional 3-5 minutes. Until charred and softened.
Meanwhile, toast the bread to your desired doneness.
When the veggies are done, it's time to start assembling. Top two slices of toasted bread with one tablespoon (each) of the spread you chose (see above).
Then top with 1/2 of the veggies for each sandwich. Finally add the final slices of bread.
