This vegan carrot bacon recipe is easy and delicious, and you can bake it or air fry it too!I was able to cut some of the oil from the recipe, lowering the calories and fat. Preheat oven to 400 degrees, and line 2 baking sheets with parchment paper.
To a medium bowl combine the soy sauce, olive oil, maple syrup, tahini, paprika, garlic powder, pepper and liquid smoke. Whisk well and set aside to marinate while you work on the carrots.
Peel and discard the outside carrot, then use the vegetable peeler to peel the carrot from end to end, creating bacon-like strips.
Add the carrot strips to the marinade, toss well to coat and allow to marinate for 15-30 mins.
Lay the carrot strips out on the prepared baking sheet so they are not touching.
Bake for 5 minutes, flip and bake an additional 5-10 minutes until crispy.
Remove from the oven and serve hot, or crumble and serve over your favorite recipes.
