These Vegan Cauliflower Steaks are as delicious as they are beautiful! They are low cost, low calorie and packed with flavor.
I like to make these roasted cauliflower steaks of weeknight dinners, but they are especially impressive for date nights at home.
Of course if you are serving these plant based steaks to a meat eater, maybe don’t call them “steaks”. But don’t shy away from serving them either , they make a great side dish or main course. And the best steak house in my town (Boise ID) has these on their menu… and yes they call them “Cauliflower Steaks”! So there (wink).

Ingredients for Plant Based Steaks
The key to making the best cauliflower vegan steaks is the spice blend. You can use your favorite, and even taco seasoning is wonderful on these. But I like to make my own so I can control the spice, and the color.
These vegan steaks get their color from the paprika and the chili powder, with a little help from the cumin. If you can’t have or don’t like spice, you can remove the chili powder and just add more paprika to the spice blend.
Shopping List for Vegan Steaks:
- 1 pound cauliflower (medium-large head)
- 1 teaspoon paprika
- ½ teaspoon garlic salt
- ½ teaspoon cumin
- ½ teaspoon chili powder
- ½ teaspoon Italian seasoning
- ½ teaspoon pepper
- Olive oil spray
- ½ cup Homemade Vegan Pesto (or storebought)
How to Make Roasted Cauliflower Steaks
Parchment paper is my best friend in the kitchen! It reduces clean up, helps me cut down on oil, and ensure the food never sticks.
But if you don’t have parchment paper you can just well oil the baking sheet, and that will ensure your cauliflower steaks don’t stick.
How to Make Plant Based Steaks:
- Preheat oven to 375 degrees and line a baking sheet with parchment paper.
- Trim and slice the cauliflower into 4 thick slices, and lay the cauliflower pieces out on the prepared baking sheet.
- To a small bowl combine the paprika, garlic salt, cumin, chili powder, Italian seasoning and pepper. Mix together.
- Spray the cauliflower with olive oil, and sprinkle 1/2 of the seasoning all over the tops of the cauliflower.
- Flip over and spray again with olive oil, and sprinkle over the remaining 1/2 of the spices over the cauliflower.
- Bake for 15 minutes, flip and bake another 15 minutes until caramelized on edges and tender.
- Spoon over the pesto sauce and serve hot.
