Mushroom Taco Shopping List:

  • Olive oil spray
  • 16 oz sliced mushrooms (see above for types of mushrooms)
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 lime 
  • 1 avocado
  • ½ red onion sliced thin
  • 6 corn or flour tortillas 

Optional Additional Toppings:

  • Red Pepper Flakes
  • Sliced Jalapeños
  • Unsweetened Cashew Yogurt (tastes like sour cream!)
  • Vegan Cheese Shreds
  • Hot sauce

How to Make Mushroom Tacos

Making these tacos takes just 10 minutes if you get sliced mushrooms. Slicing them might add a couple minutes to your prep time. But they will stile the fastest tacos you’ve ever made!

How to Make Vegan Tacos:

  1. Spray a pan over medium-high heat with olive oil and add in the mushrooms.
  2. Cook for 5 minutes, mixing often, then add in the garlic powder, chili powder, cumin, salt and pepper.
  3. Sprinkle over the lime zest, and add 1/2 of the lime juice.
  4. Cook, mixing often for another 5 minutes until browned and crispy around the edges.
  5. Meanwhile, add the avocado and remaining lime juice to a bowl and mash with a fork until smooth.
  6. To Assemble: Smear some avocado one one side of each tortilla, top with cooked mushrooms, and red onions.

Ingredients
