Vegan Taco Ingredients
With so many mushroom varieties to choose from it may seam overwhelming picking out the right mushrooms for your tacos.
Personally, I get what’s on sale. This ensures I am making these tacos with different mushrooms often, and saving money. But you can use your favorite, or choose one of these options.
The Best Mushrooms for Tacos:
- Baby Bella
- Creminis
- Portabello
- White Button

Mushroom Taco Shopping List:
- Olive oil spray
- 16 oz sliced mushrooms (see above for types of mushrooms)
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 lime
- 1 avocado
- ½ red onion sliced thin
- 6 corn or flour tortillas
Optional Additional Toppings:
- Red Pepper Flakes
- Sliced Jalapeños
- Unsweetened Cashew Yogurt (tastes like sour cream!)
- Vegan Cheese Shreds
- Hot sauce
How to Make Mushroom Tacos
Making these tacos takes just 10 minutes if you get sliced mushrooms. Slicing them might add a couple minutes to your prep time. But they will stile the fastest tacos you’ve ever made!
How to Make Vegan Tacos:
- Spray a pan over medium-high heat with olive oil and add in the mushrooms.
- Cook for 5 minutes, mixing often, then add in the garlic powder, chili powder, cumin, salt and pepper.
- Sprinkle over the lime zest, and add 1/2 of the lime juice.
- Cook, mixing often for another 5 minutes until browned and crispy around the edges.
- Meanwhile, add the avocado and remaining lime juice to a bowl and mash with a fork until smooth.
- To Assemble: Smear some avocado one one side of each tortilla, top with cooked mushrooms, and red onions.

10 Minute Vegan Mushroom Tacos
Ingredients
- Olive oil spray
- 16 oz sliced mushrooms see above for types of mushrooms
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 lime zested and juiced
- 1 avocado
- ½ red onion sliced thin
