Either way, you get a huge portion of yummy pasta for just 393 calories! And you can boost protein easily by using protein pasta. I like Banza Chickpea Pasta.

You don’t have to use the homemade pesto, and the homemade vegan parmesan cheese recipes I have supplied you with. Store-bought versions work well, and you can also use your favorite recipe.
I added them to give you more resources, and to make this recipe easier, not harder. So use your favorites, or find new favorites in my healthy versions for both.
Shopping List for Pesto Pasta:
- 1 box (16-oz) rigatoni pasta (protein pasta also works well)
- 1 avocado
- ¼ cup Homemade Vegan Pesto Sauce (or store-bought)
- ½ teaspoon salt
- ¼ teaspoon pepper
Optional Toppings:
- 4 tablespoons Vegan Parmesan Cheese
- 2 tablespoons chopped fresh basil
How to Make Vegan Pesto Pasta
If you want to meal prep this recipe, it can be done. But I do have a special tip- before meal prepping add 1 tablespoon of lemon juice to the sauce. This will stop the pesto avocado sauce from browning.
How to Meal Prep:
- Cook the pasta according to the directions the box until al dente.
- Mix the avocado pesto sauce together as directed below.
- Drain the pasta, add it back to the pot you cooked it in and add the pesto sauce.
- Toss together, then scoop into meal prep containers.
- Cool completely, then add to the freezer or fridge. Will hold for 3-4 days in the fridge, or 1 month in the freezer.
How to Cook Vegan Pesto Pasta:
- Cook the pasta according to the directions the box until al dente.
- Meanwhile, mash the avocado with the back of a fork. Add the pesto, salt and pepper and mix well.
- Drain the pasta, and add back to the pot you cooked it in, along with the avocado pasta sauce.
- Mix the cooked pasta and the avocado pesto together so that all is coated.
- Turn the heat on low, and cover the pasta. Cook for 5 minutes until the sauce is hot.
- Serve hot with homemade Cashew Parmesan, and more chopped basil (if desired).
