I write Healthy Cookbooks, so I just couldn’t help myself in making these healthy. However, I assure you that you will love them, and they are so healthy you can have them guilt free (and maybe have more than one too!)
I like to cut the oil and sugar by half with the help of unsweetened apple sauce. If you don’t like or can’t have apple sauce, pear baby food or mashed bananas will work as well.

If you need to lower your sugar intake, I have found this amazing all-natural sugar substitute. It’s made with real sugar cane, but has zero calories and no sugar. And you can get both granulated and brown sugar from them.
Shopping List for Vegan Cookies with Chocolate Chips:
- ½ cup coconut oil
- ⅓ cup white sugar
- ⅓ cup packed brown sugar
- ½ cup unsweetened apple sauce
- 2 flax eggs – 2 tablespoon flax seed meal + 4 tablespoons water (directions below)
- 2 teaspoons vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon salt
- 3 cups flour (or gluten-free flour)
- 1 cup vegan chocolate chips
How to Make Vegan Cookies
I like to use parchment paper when baking. I do this for two reasons:
- It’s easier clean up
- The cookies won’t stick (and I don’t need to oil the cookie sheet)
You can choose to use parchment paper, or oil the cookie sheets with coconut oil or vegan butter.
How to Make Vegan Chocolate Chip Cookies:
- Preheat oven to 350 degrees. Line 2 cookie sheets with parchment paper.
- To make the Flax Eggs: combine 2 Tablespoon ground flax mixed with 4 Tablespoons water in a small bowl. Set aside for 5-10 minutes to thicken.
- Whisk the coconut oil, white sugar, and brown sugar until smooth.
- Beat in the apple sauce, then the flax eggs and the vanilla.
- To a separate bowl combine the baking soda, salt and flour. Add to the wet batter and mix until just combined.
- Add in the vegan chocolate chips and mix together until just combined.
- Scoop 24 large spoonfuls, and add to the prepared cookie sheets.
- Bake for 8-10 minutes, until edges are lightly browned.
