I have even included some of my favorite combinations of them (like the chocolate coconut version) so you can make these cookies different every time.

For cookie parties, I recommend making the batter as directed, then adding the dough into 4 bowls. Add different toppings to each bowl and gently mix. Then you will have 4 flavors (6 cookies each) and really impress your friends!

I couldn’t choose my favorite flavor of cookies. So I have supplied you with a basic vegan oatmeal cookie recipe here, and in the next section 5 add-ins and some flavor combination ideas.

Shopping List for Oatmeal Vegan Cookies:

  • ¾ cup flour (all-purpose or gluten-free)
  • ½ teaspoon baking soda
  • ⅛ teaspoon sea salt
  • 2 tablespoon coconut oil 
  • ¾ cup packed light brown sugar
  • 1 flax egg – 1 tablespoon flax seed meal + 2 tablespoons water (directions below)
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened apple sauce
  • 2 cups quick oats

I love to make different combinations of these oatmeal cookies! And you can mix and match these cookie add-ins to get creative and make amazing flavors!

Vegan Oatmeal Cookie Add-Ins:

  1. Dried Fruit (cranberries, mango, peaches, raisins) – be sure to chop the big ones!
  2. Vegan Chocolate Chips (white or dark chocolate!)
  3. Flaked coconut
  4. Chopped nuts (almond, walnuts, pecans)
  5. Citrus Zest (lemon, orange, lime)

Ideally, you will want 1/2 cup of the dried fruit, chocolate chips, and chopped nuts. Use just 1/4 cup of the coconut, and 1-3 teaspoons of the citrus zest for each batch of cookies.

How to Make Vegan Oatmeal Cookies

I love using parchment paper in baking. It ensures that the mess is easier to clean up, and stops cookies from sticking to baking sheets. It also means I won’t need as much oil, making the recipe healthier.

You can skip the parchment paper if you prefer, just oil the cookie sheets with coconut oil or vegan butter first so the cookies won’t stick.

How to Make Oatmeal Vegan Cookies:

  1. To make the Flax Eggs: combine 1 Tablespoon ground flax mixed with 2 Tablespoons water in a small bowl. Set aside for 5-10 minutes to thicken.
  2. Preheat oven to 350 degrees, cover 2-3 rimmed baking sheets with parchment paper.
  3. In a small bowl combine the flour, baking soda and salt, set aside.
  4. In a large bowl or standing mixer whip coconut oil and sugar, add in flax egg and vanilla and mix together.
  5. Add in apple sauce and mix. Then add in the flour mixture and mix until just combined.
  6. Pour in the oats and any add-ins you desire and mix until just combined, over-mixing will make tough cookies. Then place in fridge for 15 minutes to firm up.
  7. Use a spoon to scoop golf ball sized dollops of cookie dough, give enough room for a little spreading. (push down a little with the palm of your hand if you want crispy and chewy cookies)
  8. Bake for 10- 15 minutes until golden brown.
