I like to make extra quinoa and save it to make these burger patties. But you can also start from scratch and make your quinoa now. I have supplied you with amounts for cooked and uncooked quinoa to make that easier.

Quinoa and Black Bean Vegan Burgers

Vegan Burger Ingredients:

  • 1 flax egg – 1 tablespoon flax seed meal + 2 tablespoons water (directions below)
  • 1 15 ounce can black bean
  • ¾ cup cooked quinoa (about ¼ cup dried quinoa cooked in 1/2 cup water)
  • ½ cup bread crumbs (or gluten-free breadcrumbs)
  • ¼ cup minced red bell pepper
  • 2 tablespoons minced onion
  • 1 large clove garlic minced
  • 1 ½ teaspoons ground cumin
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • 1 teaspoon hot sauce (optional)
  • Olive oil spray
  • 6 vegan burger buns
  • 12 lettuce slices
  • 1 red onion sliced
  • 1 tomato sliced
  • Ketchup and Mustard (optional)

How to Make Vegan Burgers:

Make the Vegan Burger Patties:

  1. To make the Flax Eggs: combine 1 Tablespoon ground flax mixed with 2 Tablespoons water in a small bowl. Set aside for 5-10 minutes to thicken.
  2. Meanwhile, add the beans to a large bowl and mash with the back of a fork.
  3. Add the quinoa, bread crumbs, bell pepper, onion, garlic, cumin, paprika, salt, and hot sauce, and the prepared flax eggs.
  4. Mix together, then divide the mixture into 6 balls.
  5. Using your hands, form each ball into a patties.

Oven Directions:

  1. Preheat the oven to 350°, and line a baking sheet with parchment paper.
  2. Add the patties to prepared baking sheet and bake for 10 minutes. Flip the veggie burgers and add any vegan cheese you may want. Then cook for an additional 10 minutes
  3. Serve on burger buns with desired toppings.

Stovetop Directions:

  1. Heat a large pan over medium-high heat.
  2. Spray lightly with olive oil spray, then add the vegan burger patties to the hot pan.
  3. Cook for 10 minutes on the first side, flip and add any vegan cheese you may want. Then cook for an additional 10 minutes, covered.
  4. Serve on burger buns with desired toppings.

BBQ Directions:

  1. Preheat the barbecue to high heat.
  2. Spray lightly with olive oil spray, then add the black bean quinoa burgers to the hot grill.
  3. Cook for 10 minutes on the first side, flip and add any vegan cheese you may want. Then cook for an additional 8 minutes, covered.
  4. Serve on burger buns with desired toppings.

How to Store and Freeze Vegan Burgers:

  • Freeze- Cool completely, separate with small squares of parchment paper (so they don’t stick together), and freeze in a container or freezer bag. Will hold for 3 months in the freezer.
  • Refrigerate- Let the veggie patties cool completely, separate with small squares of parchment paper (so they don’t stick together), and move to a container or freezer bag. Will hold for 4 days in the fridge
