This Apple Fennel Salad is so yummy, and perfect for get togethers and potlucks. But I like to make it for dinner. I have a double serving and love how protein packed this is for a vegan salad!
Make it ahead and chill in the fridge until your guests arrive, or the night before a work potluck. It holds well and gets better as the dressing marinates the salad.
Many people love cheese on their fennel salad. I have included an optional vegan cheese, and if you want a vegetarian version blue cheese, goat cheese, or parmesan cheese works great.
I find that it does not need the cheese at all. This apple and fennel salad is packed with flavor on its own.

When it comes to apples in this yummy salad, you can pick your favorites, or what’s on sale.
I like a combination of sweet and tart apples, so I get one Granny Smith and one Honey Crisp. But choose what ever speaks to you, all apples are great in this recipe.
Shopping List for Vegan Fennel Salads:
- 3 tablespoons lemon juice
- ½ teaspoon salt
- Freshly ground pepper
- 2 tablespoons extra-virgin olive oil
- 3 large fennel bulbs
- 2 apples
- ½ red onion
- 4 cups arugula
- ½ cup walnuts
- ¼ cup Vegan Mozzarella Shreds (optional)
How to Make Salads with Fennel
If you don’t have a mandolin, you can thinly slice everything with a knife. I just find it’s so easy to quickly slice everything paper thin with my handy kitchen gadget.
How to Make Vegan Fennel Salads:
- In a jar (or medium bowl) combine the lemon juice, salt, pepper, and olive oil. Cover and secure the lid and shake well (or whisk if using a bowl). Set aside to marinate while you work on the salad.
- Using a mandoline, thinly slice the fennel bulbs, apples, and red onion. Adding to a large bowl as you work.
- Add the arugula to the bowl, along with 1/2 of the walnuts.
- Shake or whisk the dressing again, then pour over the salad. Toss well so that all of the salad is coated with dressing.
- Top with the remaining walnuts and the vegan cheese (if using) and serve cold.
- You can make this ahead of time, cover and chill. It’s a wonderful vegan potluck recipe!
