- 3 cups cauliflower florets
- Olive oil spray
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon pepper
- 6 corn or flour tortillas
- ½ cup shredded cabbage
- 6 radishes sliced
- ¼ cup cilantro leaves
- ½ pint mini tomatoes
- ½ lime quartered (for serving)

- ½ cup Cashew Cream (or store-bought cashew yogurt)
- 1 chili in adobo
- ½ lime

How to Make Vegan Cauliflower Tacos
You can also make these cauliflower tacos in the air fryer! Here are the directions:
How to Air Fry Cauliflower Tacos:
- Preheat the air fryer to 320° degrees.
- Toss the cauliflower in seasoning as directed below.
- Add the cauliflower to the air fryer (working in batches as needed.)
- Spray with olive oil, and cook for 10 minutes, until crispy.
- Remove from air fryer and add to tacos.
How to Make Vegan Tacos:
- Preheat the oven to 450°, and line a rimmed baking sheet with parchment paper.
- To a large bowl add the cauliflower florets. Spray with olive oil and add the garlic powder, chili powder, cumin, salt and pepper. Mix well until all of the cauliflower is coated in spices.
- Move the seasoned cauliflower to the prepared baking sheet.
- Place in the oven, and bake for 15 minutes, until crispy.
- Meanwhile, add the ingredients for the vegan chipotle sauce to a food processor and blend until smooth.
- And steam the tortillas in the microwave according to the directions on the package.
- Time to Assemble: Lay a tortilla on a plate, top with cabbage, cilantro, baked cauliflower, tomatoes and radishes. Drizzle over a little chipotle sauce and serve.
